Within a few months of commencing baby led weaning with our daughter, she had tried almost every fruit, vegetable, and meat possible. Whilst she loved the variety of plain, healthy foods we were giving her, I began to search for some snacks that I could bake to provide her (and us) with a something a little different.

These mini banana muffins are great from a young age because they are soft and can be broken into bite sized pieces for your little one. They have no additives or nasties, are great on-the-go, and as an added bonus, they are quick and easy to make.

Muffin Ingredients

And since it’s paleo – the ingredients are simple, wholesome, and easy to find.

Muffins

Grease the muffin tin with coconut oil.

Muffins Before Oven

Spoon the batter into the tray. Bake at 200°C (390°F) for 10 minutes.

Muffins Cooked

Allow muffins to cool in the tray before removing.

Mini Banana Muffins

1 cup almond meal
1/4 tsp. baking soda
1 tsp cinnamon
1 tsp lemon juice
1 egg, lightly beaten
2 small, ripe bananas, mashed
Coconut oil for greasing muffin tray

Preheat oven to 200°C (390°F)

Mix all ingredients together in a large bowl until fully combined
Using coconut oil, lightly grease a mini muffin tray
Fill the tray with spoonfuls of mixture
Bake for 10 minutes
Allow to cool in the muffin tray before removing
Store in airtight container or zip-top bag in the fridge to keep for longer.
